summer berry cakes II i have made close to a dozen of these cakes this summer - super easy -

1 C flour + 1 tsp baking powder + 1 pinch salt, sifted together

1 stick butter
1 C sugar
2 eggs
1 tsp vanilla
fresh berries (i used sliced strawberries in one, and raspberries in the other, but even sliced fresh peaches would be yummy)

butter a springform pan and preheat oven to 350.

cream butter and sugar until fluffy. beat in eggs an vanilla. slowly add in mixed dry ingredients. pour into prepared pan and top with berries. bake for 30-45 min or until golden. enjoy with whipped cream! <--Previous Next-->
